Tropical Fruit & Pistachio Ginger Slaw
- 1/2 head purple cabbage
- 1 medium cucumber
- 1 Tbsp dried papaya
- 1/4 cup raisins
- 2 Tbsp dried cranberries
- 1/2 cup pistachios (with shell)
- 1/3 cup Bolthouse Farms Asian ginger extra virgin olive oil vinaigrette
- Thinly slice cabbage. Chop cucumber. Cut papaya into small pea-sized pieces. Add to a large bowl along with raisins and cranberries. Shell pistachios and add shelled nuts to bowl. Pour dressing over slaw. Toss to mix. Serves: 4. Enjoy!
Sweet, crunchy, and refreshing. I was so pleasantly surprised that the cabbage lost its bitter taste after the dressing and toppings were added.
