Tropical Fruit & Pistachio Ginger Slaw

Jamie says:  Yesterday was quite an eventful day.  After internship, class, the gym, and making dinner, I submitted my first job application and signed-up for the Florida Dietetic Association Symposium!

Tropical Fruit & Pistachio Ginger Slaw

Ingredients:

  • 1/2 head purple cabbage
  • 1 medium cucumber
  • 1 Tbsp dried papaya
  • 1/4 cup raisins
  • 2 Tbsp dried cranberries
  • 1/2 cup pistachios (with shell)
  • 1/3 cup Bolthouse Farms Asian ginger extra virgin olive oil vinaigrette

Directions:

  1. Thinly slice cabbage.  Chop cucumber.  Cut papaya into small pea-sized pieces.  Add to a large bowl along with raisins and cranberries.  Shell pistachios and add shelled nuts to bowl.  Pour dressing over slaw.  Toss to mix.  Serves: 4.  Enjoy!

Sweet, crunchy, and refreshing. I was so pleasantly surprised that the cabbage lost its bitter taste after the dressing and toppings were added.

  • Nutrition note: Pistachios are not only vibrant in color, they also shine as a good source of many vitamins, minerals, and monounsaturated fats, which are the heart-healthy fats.  Aim to replace your saturated fat intake (i.e. butter, cheese) with healthier fats such as monounsaturated fats (i.e. nuts) and omega-3s (i.e. salmon, sardines, flax seeds)
