Salmon, Cranberry Mashed Potatoes, Blue Potatoes and Garlic Spinach

Kathryn says: I felt like making an extra-heart healthy meal, so I whipped up this dinner up for J and I. She loved it, especially the cranberry mashed potatoes. If you’re looking for something sweet to replace the usual gravy you put on your mashed potatoes as part of a healthy fish-and-veggies meal, read on.

Salmon, Cranberry Mashed Potatoes, Blue Potatoes and Garlic Spinach

Serves: 2

Salmon

Ingredients:

  • 2 medium pieces of salmon

Directions:

  1. Place salmon on large, ungreased frying pan.
  2. Cook on medium-high heat and flip to evenly brown both sides. Cook until fish flakes when it is cut and has no raw pink color left in the center.

Mashed Potatoes

Ingredients:

  • 1/2 bag of small white potatoes
  • 2 tbs. Smart Balance butter
  • 2 tbs. nonfat milk
  • dash of salt
  • dash of pepper

Directions:

  1. Wash potatoes. Boil in a large pot on medium-high heat until soft when poked with a fork.
  2. Drain potatoes. Add remaining ingredients and blend until smooth and creamy. (I used a stick blender.)
  3. Serve with cranberry sauce (see below).

Cranberry Sauce

Directions:

  • 1/2 bag of craisins (dried cranberries)
  • 1 can of drained beets
  • 1/4 cup white wine

Directions:

  1. Blend together all ingredients in a medium pot. (I used a stick blender.)
  2. Place pot on medium-high heat. Stir and cook until desired heat.
  3. Serve with mashed potatoes.

Blue Potatoes

Ingredients:

  • 2 cups small blue potatoes
  • 2 tbs. olive oil
  • dash of salt
  • dash of pepper

Directions:

  1. Wash potatoes. Boil in a medium pot on medium-high heat.
  2. Drain and chop potatoes.
  3. Add remaining ingredients and toss.

Garlic Spinach

Ingredients:

  • 1/2 bag of spinach
  • 4 large cloves of garlic
  • 2 tsp. olive oil
  • dash of salt
  • dash of pepper

Directions:

  1. Peel and slice garlic.
  2. Put garlic and olive oil in medium frying pan on medium-high heat.
  3. Stir garlic and cook until lightly browned.
  4. Add spinach and stir until spinach wilts.
