Crispy Red Potatoes

 Jamie says:  Looking for a healthier alternative to chips or French fries?  Then try out these crispy red potatoes! 

Thinly slice small red potatoes and put on a baking sheet.  Drizzle extra virgin olive oil on top and use a fork to coat both sides of the potato slices with oil.  Sprinkle parsley, sea salt, and freshly ground pepper on top.  Bake in the oven at about 350 degrees Fahrenheit until lightly brown and crispy (about 30 minutes). 

For chip-like potatoes, make really thin slices.  For French-fry-like potatoes, make slices a little thicker.  I tried both.  I  loved the crunch of the chip-like potatoes.  They were definitely my favorites.  I dipped both in Publix GreenWise Market Organic Tomato Ketchup.  

Nutrition note:  Potatoes are high in vitamin C and potassium.
