Savory Salmon Dinner January 17, 2010

Lemon-Pepper Salmon with Parsley Red Potatoes and a Portobello and Cucumber Spinach Salad

Jamie says:  You can make this savory salmon dinner, too!  Bake salmon in the oven with lemon juice and pepper.  Bake creamy red potatoes in a baking dish with water on the bottom.  Cut the potatoes in half and sprinkle parsley on top.  (I added Smart Balance Omega Buttery Spread to the potatoes at the table.)  The salad consists of spinach and sliced portobello mushrooms and cucumbers with olive oil and sea salt as the dressing.

Nutrition note:  Salmon contains heart-healthy omega-3 fatty acids.
