Jamie says: I was feeling fancy with dinner tonight- creamy polenta with a white bean sauce. I heated canola oil in a pan (high heat) and then added slices of polenta (San Gennaro Polenta). I flipped them over and cooked both sides until they were light brown. I sliced tomatoes and sprinkled basil on them. I then added Sorrento Part Skim Mozarella Cheese followed by the tomato slices to the polenta in the pan and let it heat until the cheese melted. Meanwhile, I made a white bean sauce by using a stick blender to puree Publix Great Northern Beans, lemon juice, and dill. One of those fancy pipette things would have been perfect for decorating the plate with the sauce. Kathryn made a delicious broccoli slaw (blog to follow). The entire meal was delicious. There were no leftovers to prove it.
Nutrition note: Enjoy a meatless meal every once and awhile. Instead of meat, try adding more vegetables.
