Kathryn says: It was nice being back in the kitchen with J! She made the fish (see post below), I made the veggie, and we sat down to a warm dinner in our apartment on a frigid night in Gainesville.
J loved my mushrooms and artichokes, and they were so easy to make. I drained a can of artichoke pieces and tossed them in a pan with washed, sliced mushrooms from Publix. Then, I added olive oil, red wine vinegar, sea salt, pepper, and dried rosemary, thyme, basil, and (I finished off the) oregano. I stirred it around on the stove top set to medium-high heat, and then it was ready to enjoy!
