Black Bean Salad Ole'

Jamie says:  I have been enjoying trying new recipes this summer.  A new favorite of mine is Black Bean Salad Ole’ (I’ve made it twice already).  It is so easy and very flavorful.  I found this recipe in The 5 in 10 Cookbook- 5 Ingredients in 10 Minutes or Less by Paula Hamilton.  I will share my modified version of the recipe: 1 can (16 oz) black beans, the kernels from 2 ears of fresh corn (first microwave the corn in a wet paper towel for 3 minutes, then use a knife to cut it off of the cob), 1/2 cup salsa (the type in the refrigerator section), the juice of 1 lime (or lemon), and 1/3 cup of fresh parsley.  Just mix these together and you’ve got a tasty salad, a great dip for chips, or the perfect filling for a wrap or sandwich!  (Pictured is the salad over a honey wheat English muffin with sliced turkey.)
