Kathryn says: I went over my aunt’s house to look at photographs from her recent trip to Italy.
We made Italian-style lunches to go along with the theme.
I made a salad with arugula, sliced radishes, roasted red peppers from the jar, and carrot sticks. I topped it with a roll of lox and bordered it with pieces of fennel. I poured some roasted pepper juice on top as a sort of dressing.
As a side, I made sliced tomatoes topped with mozzarella, prosciutto and fresh basil. I drizzled olive oil over it and added salt and pepper.
