Kathryn says: We seldom buy fennel – just because it’s not a common vegetable to buy and use in cooking.  But someone in the house brought it home from Publix and it had my interest.

What to do with fennel?  I found a recipe for it (the closest thing I could find to it online was: http://recipes.health.com/recipes/1545802-spanish-salad-of-oranges-fennel-red-onion-and-mint-with-dressing ) in an old issue of Health Magazine lying around my room and went to work!  We had all the ingredients for it, which is always a good thing.

I thinly sliced fennel and onions and tossed them in olive oil and lemon juice.  Then, I added orange wedges and salt and pepper. 

Light and refreshing!

    Hi guys,

    I met you both at Williams & Sanoma yesterday and was checking out your site. its very good.
    Try roasting the fennel as well, just coat in a lilttle oil and salt and pepper and roast until its tender. It is very tasty.
