Mango Pork, Baked Plantains, and Garlic Broccoli Rabe

Jamie says:  I was craving plantains, and the plantains at the grocery store were very ripe (the ones that are almost mushy with lots of black spots are the best).  We baked them in the oven with olive oil, garlic salt, and freshly ground pepper.  Mom had pork in the fridge, so we put orange marmalade and fresh mango on top and baked it, as well.  After it was done cooking, we topped the pork with sauteed onions which were cooked in olive oil (of course).  The broccoli rabe (aka broccoli rapini), is a favorite- we cooked it in olive oil, garlic, salt, and pepper.  It was very tasty, and mom didn’t have to cook.
