
Cubanelle Pepper Sandwich
Jamie says: I was at Publix and I thought of how my mom makes delicious cubanelle pepper sandwiches…so I bought the ingredients and a nice loaf of multigrain bread from the bakery. K and I made them a little differently than mom. We sauteed the cubanelle peppers, mushrooms, and onions in olive oil, added the tomato sauce and tomato paste, added this to the bread, and sprinkled mozzerella cheese on top. Mom (and everyone) enjoyed the lunch; mom said she was thinking earlier how she really wanted those sandwiches…like mother, like daughter.
